hurrah for cozy dinners at the dinner table!

when is the last time you ate at a table in your home? for paul and i, it was last night! after what seems like months! and we vow to do it way more often. but a big push to actually sit down for dinner is to make a dinner worth sitting down for (rather than a quick rice and veg that we sit on the couch with), which last night was roasted butternut squash, raw chili, ginger garlic coleslaw, edamame quinoa and kombucha (grapefruit sage is my absolute favourite!) with jodie and janna!

the butternut squash was inspired by a recipe i saw in alive magazine but as usual for me and recipes, i didn't quite follow it. what i did was bake the butternut squash and then blend it with about 2 tablespooons of olive oil and 2 tablespoons of earth balance and 2 tablespoons of dijon and a palm-full of fresh sage and a pinch of sea salt and a small nub of ginger. then i baked it at 400 F for about 30 minutes and then i broiled it at a bit higher to brown a bit of the top because i hadn't added anything (like cheese, like the recipe had suggested). it was smooth like baby food and i liked having it mixed with the other dishes, like janna's yummy quinoa, for texture purposes. it was also nice for a "sweet" change from my garlic-heavy chili and slaw.
the chili is my ever-faithful matthew kenney one (his everyday raw book is worth buying just for that recipe, i swear!) and i had made a raw caesar-ish dressing earlier that day that we used like a sour cream on top (delicious! it was a blend of cashews and water and lemon juice and ACV and sage and dulse and tahini and olive oil and braggs) and the slaw was inspired heavily by ani phyo's chinese chickenless salad (page 161 of raw food essentials, another great book to have around). i did a blend of braggs and ACV and garlic and ginger and olive oil and tahini and maple syrup. paul told me today when he pulled out the leftovers that it really needed some nuts on top which i agreed and the original recipe had called for that.
having time off right now affords me the luxury to relax and take time to make food and i hope this experience influences my working days as well so that i get into the habit of coming home from work and sitting down at the table for dinner after making more inspiring meals with paul. ^_^

happy thanksgiving!

yesterday, after collecting walnuts in my parents' backyard, we sat down for yummy veggie-heavy dinner with the family.
i made matthew kenney's recipe for raw chili (a sure-fire hit, regardless of traditional "thanksgiving" tastes, that didn't disappoint!) and my mom made sure to have lots of steamed veggies and mashed potatoes and she made a cream sauce using almond milk, rice flour and earth balance. yay!

everyday raw chili success!

twice in the last 5 days, i have broke into my copy of matthew kenney's everyday raw and made his raw chili. after many ani phyo delicious chilis (most recently, but also here, and here). it's been fun to find another yummy chili that is easy to make, uses "normal" ingredients and has universal appeal.

reading the reviews on amazon, there is a "not for the beginner" and a "meh" as some responses. i can slightly relate, i suppose, as some of the recipes in this book have a few too many steps, ie using (one recipe) with (other recipe) and then make ("this" recipe) for on top. i need to try more recipes from everyday raw before i can entirely disagree with the discouraging reviews, but the chili recipe on page 78 is a definite win! super easy ingredients to have on hand and it turned out beautifully!

first sampling of the chili was at lisa's birthday potluck on saturday - the first potluck i have been at in awhile that had non-vegan dishes present. gasp! it was nice that this chili fit in easily as i don't think it looks super granola-vegan-ish or much unlike a "real" chili.
i love trying new recipes for potlucks. they always seem to turn out amazing and then i also get to try other people's food creations! so much fun!
 and now, tonight, at my parents' place, we super enjoyed our delicious chili outside:
my mom cleared off the outside chairs so we could all enjoy the remaining sun of the day sans spiders. thanks mom! ^_^ 
i love that you don't even notice it's "raw". my parents said it tasted like chili and they both really enjoyed it. yay! i tried to explain why i soaked and sprouted the raw almonds but i'm not so good with such details. i figured it was the best way to make the almonds "alive" again. just like it wouldn't be so helpful to eat seeds you want to grow vegetables from and you wait until they have sprouted into plants, you soak the raw nut to make it into something nutritionally dense and easily digested. is that accurate? anyone?

b-ham and time with the fam!

this week i have been hanging out with my parents in chilliwack and on wednesday, i went down with my mom and aunt to bellingham. before i show off some things me and my mom have been making for meals this week, i gotta introduce a new crepe place in bellingham (as of april this year) called ab crepes on railroad, near everything i wanted to see in bellingham (terra organica, buffalo exchange, digs...)

this place is great as they have vegan/GF crepes and regular crepes. i got a southwest crepe, without cheese of course. they didn't have daiya but the girl helping us mentioned they had several people asking about it within a couple days so they were considering it! ^_^

at terra organica, i got some chocolate for paul (because i ate his stash out of the freezer! oops!) and my mom got some snacks for us, including one of my beloved nori sticks from gopals. i hadn't tried this kind (texas barbq) and me and my dad loved it! he agreed it was like pepperoni and it had a nice kick of spice!
back at my parents's place that night, my parents had pizza and i made a salad for their sides and for my dinner! the salad consisted of greens from my mom's aunt's garden on the island, beet tops, and mushrooms with a dressing of blended lemon, garlic, walnuts, ACV, salt pinch and some salad booster. super delicious!
on tuesday night, we made ani phyo's raw chili to top a collard green leaf and some beet greens with ground walnut taco "meat" and avocado on top of that. awesome! i love that my parents have been enjoying the food that i enjoy. i must be doing something right! it's also been super nice that my mom is paying close attention to what she buys as she has a gluten allergy and dairy sensitivity. so she looks out for a lot of the same things i look out for!
i made smoothies every morning this past week for me and my parents which was fun. my first one was a chocolate banana one for my dad (frozen banana, cacao powder, mesquite, maca, coconut milk and a bit of ginger). this one was frozen mango and banana, apricots, lemon juice, a bit of camu camu, mesquite, ginger and goji powder with water.
this smoothie is lettuces from my mom's aunt's garden, apricots, frozen mango and banana. 
and this morning, i did the last collard leaf, some more of my great aunt's garden greens, some parsley, 4 apricots, 1.5 frozen bananas and a fresh mango. my parents are loving these smoothies and i'm excited that they will continue to do them when i am back home! i think it's such a great and yummy way to "get your greens"! ^_^
yesterday's lunch was an avocado/cucumber/lettuce sandwich on silver hills chia chia bread. my mom took me to the silver hills shop in abbotsford on our way home monday and it was awesome to see the assortment of raw and organic foods they are stocking! 
for dinner last night, my mom sliced up a zuchinni into noodles and rinsed the kelp noodles and we tossed them into a sauce i made out of 1.5 avocados, a garlic clove, juice from 1 lemon, a splash of ACV, a sprinkle of cumin and salt and a bunch of fresh basil before serving on top of a collard green leaf. SO YUMMY!
tonight we roasted marshmallows in the backyard with my friend since grade 2 (!!!) and her 4 (!!!) kids. it was so much fun! and it was awesome that it wasn't even noticeable that i had vegan/gluten-free graham crackers, chocolate and marshmallows (though the dandies were noticeably smaller than the kids'  marshmallows!

it was a wonderful week off and definitely a vacation being at my parents' place! 
now i have to start using my dehydrator again when i get home! ^_^

and it just keeps getting better...

i am still loving ani phyo's raw chili and so does my sister. she is still asking for it when she comes over for dinner! and it was awesome to have sarah over tonight too to try it. it is a total win!!!
plus i tried this cashew sour cream to go along with the raw tacos idea and it was great! i made way more than needed so there'd be leftovers and have had several people sample it now - it's the best sour cream ever!

seattle!!!

i finally got to try some raw places in seattle... the day before i left for korea. i got to stock up on some raw snacks for my trip too which was awesome. hurrah for terra organica in bellingham on the way and whole foods (one of them!) in seattle on the way back for the sales and stuff i can't get in canada!

i had some chocolate mint pudding from happy day raw foods and a "happy herb" bar from gopal's for breakfast. was really craving savoury things after this though.
 went to chaco canyon in the university district for lunch. had the raw burrito and a green goddess juice.
 my friend had the ginger sesame bowl (featuring kelp and zucchini noodles) and maybe it was the boost juice? i was quite happy to finish her meal when she couldn't!
 later, for dinner, we shared a raw chili con marvelous at thrive. it was AWESOME and i'm excited to try replicate it at home when i get home. the manager (and everyone else we came in contact with) was super friendly and i enjoyed this place more than chaco canyon...
