1 bean salad.

i hated 3 bean salad growing up, but the other day, i had a craving for it. sort of. no kidney bean desires, but white (cannellini) beans and crunchy vegs of some sort were totally on my radar.

i ended up with a  tangy, creamy, crunchy and soft mix of all things wonderful:

salad:
*cannellini beans, 1 can
*chopped carrot, 1
*quartered sliced cucumber, 1/2
*sliced red cabbage, a couple slices off a whole one
*cubed avocado, 1
*sliced fennel stalk, 1
*minced white onion, 1 sliver off a whole one

dressing:
*a spoon of sprouted chickpea miso
*a little squirt of dijon
*a splash of ACV
*a splash of omega 369 oil blend

hurrah for days off! (a salad.)

ok, i have salads every day. but something about slowly preparing one for lunch today made me want to post. and, well, jodie mentioning my blog last night and i admitted i have kinda abandoned this guy lately because of my annoyances with photo allowances. i'm using photobucket now and going to roll with some posts while i have the inspiration!
so, today's salad!

cut up and thrown in:
-several leaves of romaine
-an avocado
-a yellow carrot
-a small handful of pea shoots
-a stem of fennel
-a couple radishes

blended as dressing:
-splash of hemp seeds
-spoon of tahini
-a bit too much filtered water (1/4 cup? would definitely start slow next time)
-a splash of apple cider vinegar
-juice of one lemon
-half a big clove of garlic
-leaves off one stem of sage
-a few chunks of dulse (shells washed off ^_^)

delicious! 
i'm a garlic and sage fiend lately. (on top of my avocado and radish OCD). loving it!

favouritesalad.

on friday, totally uninspired to make my lunch, i threw together my favourite things for a lunch i could look forward to and enjoy:
- sliced field cucumber (skin scraped with a fork first to soften)
- a couple stems of fennel, chopped
- one avocado, cubed
- a couple small spoons of raw, traditional sauerkraut, chopped
- a few leaves of basil, sliced

and i planned to repeat it today so i could get a picture of it,  but i couldn't find any cucumber! so, here it is with zucchini noodles instead. and some radish! still yummy! ^_^

day 24 of 30 green smoothie days in a row

kinda wishing i didn't make a green smoothie today.
i started by squeezing fresh orange juice and goodness, would it have been AWESOME just to drink that. and why didn't i? well, because i was going to use it for this green smoothie!
this smoothie was going to just be the fresh orange juice with collard greens. neither of which i tried on their own. then, i remembered i had a bulb of fennel i hadn't used yet so i added a few stalks of that. not knowing how it tastes in a smoothie as i've only ever used it in salad (which is delicious, btw!). then i was kinda freaked that it tasted too strong like having an onion-aftertaste kind of strong. so i added an asian pear and a frozen banana and an avocado. now i'm just drinking it slowly. whew. it's intense. if it didn't have the aftertaste, i would be into it. but yikes. i should really start slow when adding new ingredients. 
 
paul hasn't commented on the taste. but he didn't like the texture so he had to blend it with apple juice again.

i gotta do something safe for tomorrow's smoothie!

cascadas farallas, costa rica, day 2 (first full day)

so... the day starts off with a drink from a young coconut, yoga and breakfast!



so i had chia cereal every morning in korea but this was better as the chia was soaked perhaps overnight (that makes it so much more gelatinous) with maybe some coconut milk and banana blended in and blueberries, strawberries and banana chunks mixed in. yummy!



had a kale juice with lunch and a green papaya salad with tomato canopies.

















and dinner started with starfruit juice and a thai salad featuring hibiscus, fennel and bok choy...














and sushi was the main course featuring rice made of cauliflower and a "salmon" sashimi made of carrot. i found the sashimi kind of bland but all in all, still exciting!













for dessert - banana surprise. blended frozen banana with nuts and blueberry coulis on top!
